Lemon Sunshine Cake
Ingredients
1 (18.25 ounce) package lemon cake mix
1 (3 ounce) package instant lemon pudding mix
1/2 cup sugar
4 eggs
1 cup peach nectar
1/2 cup vegetable oil

For the Glaze

2 cups sifted confectioners' sugar
1/4 cup peach nectar
1 tablespoon lemon juice
1 teaspoon grated lemon peel


Directions 
  1. Preheat oven to 350 degrees F
  2. Spray and flour a 10-inch Bundt pan - fluted
  3. Beat lemon cake mix, lemon pudding mix, sugar, eggs, 1 cup peach nectar, and vegetable oil in a bowl with electric mixer on medium speed until mixed. Pour batter into prepared cake pan. Bake in preheated oven until a toothpick inserted into the middle of the cake comes out clean, about 50-55 minutes. Cool cake in the pan for 15 minutes before removing cake to finish cooling on rack.

Glaze
  1. Mix confectioners' sugar, 1/4 cup peach nectar, lemon juice, and lemon peel in a bowl to make a smooth frosting. Place cake on a serving platter; poke holes in top of the cake with a fork. Pour frosting slowly over the cake, allowing frosting to soak into the holes and drizzle down the sides of the cake.

Next time you make a pot of coffee, pour some into ice cube trays. Once frozen, you can use them to chill iced coffee without diluting it.
Exfoliate Skin
For smoother skin, mix coffee grounds into regular body lotion to make it exfoliating.
Freshen Air
Deodorize unpleasant kitchen smells (such as in the freezer or refrigerator) by placing a small bowl of coffee grounds anywhere you want odors absorbed.

Soda Biscuits - Gluten free, egg free

Soda Biscuits

  • I also recommend using real, salted, butter and full fat sour cream

Ingredients

  • 1/3 cup butter
  • 1/3 cup sour cream ( I will replace the sour cream with Orley whip or miracle whip for a dairy free version)
  • 1/2 T sugar
  • 1 1/2 cups  Almond Blend flour
  • 1 tsp xanthan gum
  • 1 T baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cream of tartar
  • 1/3 cup club soda or unflavored, unsweetened, sparkling water
  •        

Instructions:

Melt butter in a medium bowl in the microwave. Begin with 10 seconds, remove and stir. 
Butter should be just barely melted.
Whisk sour cream and sugar into melted butter until smooth.
Add flour, baking powder, baking soda, salt and cream of tartar and stir with a fork until 
mixture resembles coarse crumbs.
Add sparkling water and stir until mixture comes together. It should be fairly sticky.
Lightly flour counter top with about 2 tablespoons more flour mix and turn dough onto 
counter, turning to fully coat. Be careful not to mix the flour into the dough.
Flatten with your hands into a circle about 3/4″ thick.
Fold in half to form a half circle, then in half again to form a triangular shape, and pat to 3/4″ thickness again.
Repeat the last step. This folding is what creates the flaky, layered effect.
Cut into circles with biscuit cutter or large cup and arrange in a round cake pan so the 
biscuits are so close they are almost touching.
Preheat oven to 425° 220C.
When oven is preheated, bake biscuits for 7-10 minutes. Remove biscuits just as edges begin to turn a 
golden brown and be sure not to overcook or they won't turn out so flaky and soft. 
Pry biscuit in half horizontally with a fork to see if it's done.
I must add that I found some whipped cinnamon honey at my local market and it tastes divine on these biscuits.
These are best served warm. Store any leftovers (if you happen to have any!) in a sealed bag in the refrigerator. 
To reheat, wrap in foil and place in 300° 150C oven about 10 minutes, or microwave individual biscuits about 
25 seconds on 50% power. 
I've also made a double batch and wrapped half the cooled biscuits in foil to store in the freezer. 
They taste just about as good warmed up as they do fresh!

Pecan nut pie.doc

Pecan nut pie

1 ½ cups all-purpose flour
½ teaspoon salt
½ cup vegetable oil
¼ cup whole milk
½ cup golden syrup or light corn syrup
1 stick soft butter
1 cup soft light brown sugar
1 teaspoon vanilla extract
3 cups mixed nuts
3 large eggs


 Preheat your oven to 180°C/gas mark 4/350ºF. In a large bowl, mix the flour, salt, oil and milk to form a rough dough.
Tip out into a 25cm / 10 inches diameter flan dish, and press the dough patiently over the base and the sides of the dish,
slightly coming up over the top if possible. Put in the freezer.
Melt the syrup, butter and brown sugar over a lowish heat in a saucepan.
Add the vanilla, stir, then take off the heat and let it stand for 10 minutes.
Take the pastry-lined flan dish out of the freezer, and arrange the nuts on it.
Whisk the eggs into the slightly cooled sugary syrup until it looks like a caramel mixture, then pour it over the nuts.
Bake in the oven for 40 minutes, or until the filling has set and the pastry is golden.

MAKE AHEAD TIP:

Make the pie up to 2 days ahead and keep in an airtight container.

Sweet and Sour Chicken

Chicken Breading:

3-5 chicken breast

·    salt and pepper

·    1 cup corn starch

·    2 eggs, beaten

·         1/3 cup canola oil

·         Rinse chicken, trim off fat or extras and then cut into 1 inch cubes. season with salt and pepper. Dip chicken into corn starch and coat all the way and then into eggs. Heat oil in large skillet. Cook chicken until browned. Place in baking dish. 3 chicken breasts can be in a 9x9 but 5 chicken breasts fits better in a 9x13.

Sauce:

·    3/4 cups sugar

·    4 Tablespoons ketchup

·    1/2 cup white distilled vinegar

·    1 Tablespoon soy sauce

·    1 teaspoon garlic salt

 

Whisk until smooth. Then pour evenly over chicken. Turn chicken so the sauce gets on both sides and then put in the oven at 350 degrees for 15 minutes. turn chicken and then cook for 15 more minutes.

Sweet 'n Sticky Baked Chicken Drumsticks

Sweet ‘n Sticky Baked Chicken Drumsticks

Yield: Yields 12 chicken drumsticks

Ingredients:

1/2 cup balsamic vinegar

1/2 cup honey

1/2 cup light brown sugar, packed

1/4 cup low-sodium soy sauce

3 garlic cloves, minced

12 chicken drumsticks

2 Tbsp. sesame seeds

1/4 cup chopped fresh flat-leaf parsley

Directions:

Combine the balsamic vinegar, honey, brown sugar, soy sauce and garlic cloves in a large resealable bag. Add the chicken to the bag and seal. Marinate in the refrigerator for 2 hours.

Preheat the oven to 450 degrees. Line a rimmed baking sheet with aluminum foil. Top with a cooling rack. Remove the chicken from the bag, reserving the marinade, and arrange the drumsticks on the cooling rack. Bake until the skin is caramelized and dark in spots, about 30 minutes.

Meanwhile, place the leftover marinade in a small saucepan, uncovered. Bring the marinade to a boil, then reduce the heat to a simmer and cook over low heat until thick, about 15 minutes. Use a pastry brush to brush the cooked marinade on the chicken.  Return to the oven for 10 more minutes.

Place the chicken on a serving platter and sprinkle with the sesame seeds and the chopped parsley.
